 i work at a corporate store and we got a new 30k oven this week. our old one was a 6 1/2 minute oven and this new one is smaller and is a 4 1/2 minute oven, with freakin' lasers that turns the oven on and off depending on whether or not there's anything in it. it's pretty cool. the only think that sucks is that if you're on cut, you kinda have to rush since the pies come out fairly quickly. and also, you can't take much of a break while they're cooking. well, a two-minute-less break. anyways, i was told that no other pizza place, in austin at least, got a new oven [from marshall middleby], and i called my old PJ's in south texas to see if they got a new oven and they didn't know what i was talking about.

 One PJ's getting a new oven doesn't mean others will. They don't get new ovens until the old one is ready to fall apart.

 Too bad they can't cook the pizza with the lasers. I wonder how long that would take. If it was Star Trek, they'd use dilithium crystals or the oven would run on antimatter. You want it hot and now? (Never mind about replicators. We want authentic food.)

 We didnt get one but we also have a store with the same oven that our shift manager ran a dough tray thru 2 weeks ago.Never came to fix it so we took it apart and got the melted tray off conveyer with a blow torch...cheap sh1ts.Dont think we will see new anything with this group.

 Isn't that the one thats hooked up to the computer system and ramps up it's heat depending on what's coming? I didn't know they were going to use lasers for item detection, I figured it'd just monitor the makeline or incoming orders. Eventually everyone is going to have big versions of those ovens Subway has. Insta-bake in a few minutes and then it turns off. The stores definately need to save on the BTU's.

 Our shift girl was breaking down the make line and had a dough tray to put stuff on to carry to the walk in. She thought the bottom oven was off, put the tray down and the phone rang. She walks away...1/2 hour later after small rush.."whats that smell?" Green gooey mess dripping from the bottom oven. It went all the way through and melted totally.OOPS!

 That oven opening is way too big. The adjusting plate shouldn't be high enough to let a tray into the oven. That's way bigger than a pizza's height.
